There are scents you never forget.
Freshly cut grass. The crisp smell of the first snowfall. And that unmistakable aroma filling the house when Silvia Reiter takes her farmhouse bread from the oven.
At Reiter’s Holiday Home in Russbach, that smell simply belongs.
A fresh loaf – crisp on the outside, soft on the inside.
The recipe comes from Silvia Reiter’s family – always a little different, depending on mood, weather and flour.

And for those who want to bring that smell home, here’s the easy version of the recipe.
Ingredients (for 2 loaves):
1 kg farmhouse flour (a mix of wheat and rye, ideally local)
650 ml lukewarm water
1 cube fresh yeast (or 1 packet dry yeast)
1 tbsp salt
1 tsp sugar
1 tbsp bread spice (caraway, fennel, aniseed, coriander – to taste)
1 tbsp apple cider vinegar
optional: 100 ml buttermilk or 1 spoon of sourdough for extra flavour
1. The beginning needs patience
Stir the yeast, sugar and a little lukewarm water together.
Let it rest until small bubbles appear – that’s when the bread begins to come alive.
2. Time to knead
Add the flour, salt, vinegar, spices and the remaining water.
Knead into a smooth, elastic dough by hand or with a mixer.
Cover and leave to rise for at least an hour – as Silvia always says:
“Bread needs time – otherwise it won’t turn out right.”
3. Shape two loaves
Place them on a floured baking tray and let rest for 20 minutes.
4. Baking
Bake in a preheated oven at 200 °C for about 50–60 minutes.
For a crisp crust: place a bowl of water on the bottom of the oven.
5. Tap test & enjoy
If the underside sounds hollow, it’s ready.
Let it cool – or enjoy it warm with butter and a pinch of salt.
